Uk research explains role of selenium in spread of common foodbornepathogen in chicken products

Researchers at the Institute of Food Research, in the UK, say theyhave discovered why the micronutrient selenium is important to thesurvival of Campylobacter bacteria. In Australia, Campylobacter is one of the most common causes ofbacterial gastroenteritis and is frequently associated with theconsumption of contaminated poultry. Knowing how and whyCampylobacter uses selenium could help develop ways of controllingit, benefiting public health and the food industry. The new research, by Dr Arnoud van Vliet at the Institute of FoodResearch, identified two Campylobacter genes required for theformation of the formate dehydrogenase enzyme which is essentialfor the bacteria’s survival. Inactivation of these two genes blocked the formation of theformate dehydrogenase enzyme, but when the bacteria weresupplemented with extra selenium, they were able to synthesize theenzyme again, suggesting that the two Campylobacter genes areinvolved in selenium metabolism. As it was previously shown that the lack of formate dehydrogenaseaffects the ability of Campylobacter to colonise the chicken gut,the new findings may open up possibilities to target this pathwayfor antimicrobial purposes. “With the identification of these two genes essential forformate respiration, we now hope to have a tool to generateknowledge that helps us get a better understanding of what makesCampylobacter so good in colonising the chicken gut and causedisease in humans. Such knowledge is essential if we want toachieve the ultimate goal of reducing the impact of Campylobacterin the food industry, Dr van Vliet said. Dr van Vliet also said that, as the same selenium metabolism genesand the formate dehydrogenase enzyme are also present in otherimportant foodborne pathogens like Salmonella and E. coli, it maybe possible to extend investigations to other areas of food safety.
